Chicken Royale


Ingredients

  • 1 kilo chicken, quartered
  • 1/2 cup all purpose flour
  • 2 tsp. rock salt
  • dash of peppers
  • oil for frying
  • 4 pcs. potatoes quartered
  • 4 cloves garlic, pounded
  • 1/2 cup onion, sliced
  • 1/2 cup tomatoes, quartered
  • green pepper, cut into squares
  • 2 pcs. carrot cut into 1 inch slices
  • 1 cup soup stock
  • 1 cup tomato sauce
  • 1 small can pineapple tidbits
  • salt, pepper, vetsin to taste
  • pickle and olives for garnishing

Instructions

  1. Combine flour and 2 tsp. rock salt. Use to dredge chicken. Fry in deep hot fat until golden brown. Set aside. Fry potatoes. Set aside. Saute garlic and onions in little oil. Add tomatoes, chicken, potatoes and rest of vegetables. Add tomato sauce and soup sotck. Simmer until vegetables are crispy tender. Place in serving dish and garnish with pieapple tidbits, pickle and olives.
