Buko Crust Pie


Ingredients

  • 1 CRUST PIE:
  • 1 1/4 cups all purpose flour
  • 1/3 cup margarine
  • 1/4 tsp. salt
  • 4 to 5 tbsp. cold water
  • FILLING:
  • 1/4 cup margarine, melted
  • 1 cup sugar
  • 3 eggs
  • 2/3 cup evaporated milk
  • 1 tsp. vanilla extract
  • 1/8 tsp. nutmeg
  • 1 cup shredded young coconut

Instructions

  1. Crust:
  2. Measure dry ingredients into a bowl. Cut in margarine until the size of corn meal. Add water and mix. Form into a ball. Roll pastry and fit into a pie pan. Bake for 10 minutes at 350 degrees and remove from oven.
  3. Filling:
  4. In a large bowl beat together margarine, sugar and eggs. Slowly beat in milk, vanilla and nutmeg. Stir in coconut. Pour mixture into partially baked crust. Bake at 350 degrees for 40-45 minutes or until knofe comes out clean from custard. Let cool in rack. Serve when cooled.
