Buko Crust Pie
Ingredients
- 1 CRUST PIE:
- 1 1/4 cups all purpose flour
- 1/3 cup margarine
- 1/4 tsp. salt
- 4 to 5 tbsp. cold water
- FILLING:
- 1/4 cup margarine, melted
- 1 cup sugar
- 3 eggs
- 2/3 cup evaporated milk
- 1 tsp. vanilla extract
- 1/8 tsp. nutmeg
- 1 cup shredded young coconut
Instructions
- Crust:
- Measure dry ingredients into a bowl. Cut in margarine until the size of corn meal. Add water and mix. Form into a ball. Roll pastry and fit into a pie pan. Bake for 10 minutes at 350 degrees and remove from oven.
- Filling:
- In a large bowl beat together margarine, sugar and eggs. Slowly beat in milk, vanilla and nutmeg. Stir in coconut. Pour mixture into partially baked crust. Bake at 350 degrees for 40-45 minutes or until knofe comes out clean from custard. Let cool in rack. Serve when cooled.
